How do I extract a readable image from an fbo in 2D coordinates even if I am working with 3D

What I need is the ability for someone (An AI agent) to actually see and not display things on screen.

You could use ofTexture::drawSubsection to draw the texture of one FBO into another. For more complicated extractions (e.g. affine transformations) you would have to use a shader.
